Thanksgiving Leftovers? Food Safety Tips

  You've had your feast, now you're thinking ahead to leftovers and turkey sandwiches. From the veggie tray to the turkey to the pumpkin pie for dessert Thanksgiving is an all day event.

 But while you sit and talk, your food shouldn't sit out. "Literally food borne illnesses, we have seen deaths from e-coli, salmonella, you've seen outbreaks from contaminated food at restaurants.

  Experts say the rule is four hours total from oven to refrigerator. That means once your meat or side dishes are at room temperature you've got two hours before you've got to get them back in the fridge.

  And those leftovers in the fridge may not last as long as you think. "Three days in your fridge, typically recommendation for any cold side." Like potato or pasta salad. But when it comes to gravy, you've got a much shorter window. "Gravy, one or two days."

  Our experts say the sooner you get it in the refrigerator the longer it will last, unless you're talking pumpkin pie. "Pumpkin pie doesn't have to be refrigerated, that can stay out."

  Our dietitian says your leftovers will last even longer if you freeze them. Turkey does especially well. If you re-heat you want the food to be hot enough. Use a thermometer to get it between 140 and 165 degrees.
